Tanuki Udon Recipe

Ingredients
-4 packs of Udon noodles
-1/4 Aburaage
-1/2 green onion (chopped)
-1/2 oz ground ginger
-10 cups dashi soup
-1 tbsp sake
-4 tbsp mirin
-1/3 cup soy sauce
-1 tbsp salt
-5 tbsp sugar
-4 tbsp katakuriko (mixed with 10 tbsp water)
 
Preparation
  1. Boil udon noodles
  2. Boil dashi soup and add sake, mirin, sugar, salt, soy sauce, aburaage and ginger
  3. Add katakuriko to thicken the soup
  4. add udon noodles and sprinkle green onions
